Serving sizes for many of the recipes appear to be adjusted to make the recipes look low carb. Example: 3 lbs of chicken with 1 red pepper & 4 habenero peppers with a little sauce is not feeding 12. Another calls for 3-4 pounds of boneless beef chuck roast for 8-10 servings, no way. Normally 1/2 lb per person, so 6-8. On low carb, bulk of diet is meat & veg so way more meat eaten. Prob serves 4-6. So at 18 carbs per serving if for 4-6, wld be too many carbs. Another issue I have is with the statement that "complex carbohydrates high in fiber...take a long time to be digested hence not causing spikes in the blood sugar levels." It does spike sugar! Just takes a little longer for it to happen. Ask a diabetic.
