I stopped reading after the breakfast recipes because I couldn't believe this diabetic cookbook would recommended recipes with sugar, honey, and include so many carbs. I was terribly disappointed and wish I could get my money back.
Be wary of cookbooks with high-quality photos taken by "food designers". Too many $$$s. Expected better from General Mills. Little practical use for 1 person (recipes are for 8 to 12 servings average) and assume a "gourmet pantry" of special ingredients hardly found in an average person's pantry
I had high hopes for this cookbook, as I've always found Betty Crocker cookbooks to be reliable sources for good recipes. I was shocked to find so many recipes in a cookbook for diabetics calling for ingredients that have a high glycemic index. The book may list nutritional information about carbohydrate and fat counts, but it is not a good resource for people with diabetes who are looking for recipes that won't cause blood sugar to spike. I can't decide whether to donate this book to Goodwill or put it in the trash.
Worse cookbook ever!!! I know it's for diabetics;however the ingredients are so different from what is available in name brand grocery stores that it is difficult to find said ingredients. Three kinds of flour for one recipe??? A different diabetic cookbook I just purchased from Amazon is great. I wanted more recipe options but this isn't it.
