Sadly, I wish I had read the reviews before purchasing as this book is in line with American eating/recipes so unfortunately unable to acquire or indeed know the recipes required for the standard cup of sauces that are required. Some good ideas but not for UK palate.
I am not diabetic, but have family members that are. This book is more than just a cookbook - it explained diabetes in a simple way that made it easy to understand. The recipes use common ingredients, so you probably have enough on hand to make several dishes. I like how you can use different methods of cooking - instant pot, crockpot, casserole, etc. for the dishes. She includes lots of practical advice, too!
I love this cookbook because it uses foods that my husband and I like to eat. They are easy to make at the last minute since they are "one pot" and cleanup is a breeze. I'll have to admit that I have changed a few recipes to use ingredients that I had on hand. For instance in one recipe I substituted black-eye peas for black beans.
I received two copies of this book. What would you like for me to do with the second copy? And oh yes I have gone through the book and I am very happy with it. I plan to begin using the One Pot Diabetes cookbook as soon as I go to the grocery store.
Product came quickly, was in excellent condition. As a non-diabetic with some relatives who are, I never knew what should be prepared for unexpected company, The recipes are very helpful and most of the ingredients are actually already on hand and workable for all family members. I'm ordering a second book as the first one is being gifted to new friends, one of whom is from England so thought the diabetic information as well as the up to date cooking methods would be helpful to them both. I do recommend this book!
