i bought this book hoping to learn to feed my wife and two teenage sons who all have big appetites. I followed the recipes but there never seems to be enough food for all of us. I tried doubling the recipe but it takes twice as long to make a meal eat it then make it again. What a disappointment.
Overall a decent cookbook. It's just me during the week, and I get tired of adapting recipes down from 4-6 servings, so I have recently bought a few cooking for 2 cookbooks.
The recipes are generally simple to make and there are a fair number I would not think to make on my own- especially the vegetarian ones. I like that there aren't a ton of specialty items needed to buy for recipes, so it leads to less food waste. I also like that they don't take too long to make.
So far I have made 3 recipes in the book. All took slightly longer than than the written down time (15 minutes vs. 10 for example), but that is a problem with almost all cookbooks. The recipes written as is a pretty plain and have pretty boring flavor profiles. If you add the optional ingredients, it makes them better. I have also been adding additional ingredients not listed to perk them up some. The biggest issue I have though is number of dishes used if the recipes are cooked as written. For stuffed peppers I dirtied 2 large pots, a large frying pan, and a baking dish + several smaller bowls for ingredients. By flipping the order of a couple steps you could have reduced that to 1 large pot + a dutch oven or corning dish (stove to oven). This would cut down on clean-up a lot.
This cookbook is perfect for cooking quick, healthy meals for me and my husband! The recipes are very simple, easy to follow but still so delicious. Would 100% recommend if you're looking for easy recipes that support healthy eating. Because the recipes have limited ingredients, they're also very affordable to make. Love it so far!
I'm a family of two, and was going nuts trying to cut down recipes for full families. Of all the cookbooks I own, this is the one I keep going back to for weeknight meals. Yes, the recipes are on the simpler side, but I don't mind that. It's so easy to doctor the recipes.
I recommend this to beginners for sure, because it's hard to mess these recipes up, the ingredients aren't ridiculous, and once you get more comfortable with cooking you can change things around. A lot of these are great bases and foundational meals.
I have to say I was skeptical that you could actually create delicious dinners with so few ingredients and in a short amount of time. After trying out a few of these recipes, including last night's Asian Chicken Lettuce wraps, I am so impressed!! The meal really only took around 20 minutes (including prep time like chopping veggies) and had amazing flavor. We easily doubled the recipe and had leftovers for lunch the next day :)
A nice diverse collection of various relatively quick simple to prepare recipes covering pretty much every palate. Most recipes use fairly common ingredients which is nice. Wish the book had more photos, only a sprinkling here and there. Kindle formatting is kinda horrid, don't know why a number of pages have a yellow background with black text, but serviceable.
